Executive Sous Chef - (181867 )


Tucked away in Plano, a suburb of Dallas, Gleneagles Country Club was named one of the Best Country Clubs in DFW (Avid Golfer, 2017)The Club offers 36 holes of golf, tennis, fitness and pool facilities. Gleneagles offers its members multiple a la carte dining options, a the club serves as a premier location for banquets and private events.

P.M. Sous-Chef

The Sous Chef is responsible for supporting the Executive Chef in overseeing the day-to-day culinary operations at the Club. They supervise the training and development of the kitchen staff to ensure the highest quality of food service for Club members and their guests.


1.      Responsible for proper preparation, excellence of product, profit and labor cost.


2.      Organize and help in the service of all activities concerning ala carte, employee meals and private dining rooms.


3.      Consistent preparation and presentation based on overall standards, including portion size, of daily special, salads, entrees, etc. as applicable per work assignment and as designated by Executive Chef which are produced within ClubCorp's quality standards guidelines.


4.      To hire, train, supervise, direct and/or performance manage employees when needed. To enhance the overall knowledge and team spirit of the kitchen staff, providing the 3 Steps of Service.


5.      To attend F&B meetings, banquet meetings, and line up.


6.      Prepare work schedules for the kitchen crew, monitor payroll costs and Kronos reports as requested .


7.      Ordering, receiving and proper rotation of food and kitchen goods.


8.      Menu development for the ala carte and banquet menus, and any other special request by a Member or the Executive Chef.


9.      Responsible for the expediting at any meal period and ensuring proper quality, portioning and presentation.


10.  Adhere to all cleaning schedules and duties set up by the Executive Chef.


11.  Responsible for cleanliness and sanitation of individual work area and kitchen as a whole, including equipment, counters, tools, waste areas, etc.


12.    Assist fellow Employee Partners, Members and guests to ensure delivery of the 3 steps of service without being directed.  Be aware of team members and the environment and participate as a member of the team. 

Job Qualifications

  • Culinary school graduate
  • Two years experience in supervisory position
  • Understanding of a la carte and banquet revenue generation
  • General knowledge of expense control as it relates to kitchen payroll and the forecasting/budgeting of expenses
  • Technical literacy, including Microsoft Office, payroll management and point of sale systems
  • Bilingual (English - Spanish) communication ability helpful

(Internal Candidates should be working towards Chef STAR certification and be ServeSafe certified.)
